Ingredients:
1 cup uncooked Calasparra rice (or other short-grain rice)
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
1 pound shrimp, peeled and deveined
1 pound mussels, scrubbed and debearded
1 pound clams, scrubbed
1 pound chorizo, sliced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup pimentón (smoked paprika)
1/2 teaspoon saffron threads soaked in 1 tablespoon of hot water
1/4 cup dry white wine
1/4 cup fish broth
1/4 cup water
Salt and pepper to taste
Lemon-Dill Sauce:
1/2 cup plain Greek yogurt
1/4 cup freshly squeezed lemon juice
1 tablespoon chopped fresh dill
Salt and pepper to taste
Instructions:
1. Heat the oil in a large paella pan or skillet over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for an additional 1 minute.
2. Add the shrimp, mussels, clams, and chorizo and cook until the seafood is lightly browned, about 5 minutes. Stir in the parsley, cilantro, pimentón, and saffron mixture and cook for 1 minute.
3. Add the rice and stir to coat the rice with the seafood mixture. Cook for 1-2 minutes.
4. Add the wine, broth, and water. Bring to a boil, then reduce the heat to low and simmer, covered, for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
5. Preheat the grill to medium-high heat. Slice the cooked paella into squares and serve with a dollop of lemon-dill sauce on top.
6. Mix the yogurt, lemon juice, and dill in a bowl to make the sauce. Season with salt and pepper to taste. Serve chilled.
